Buffalo Chickpea Chili
Ingredients
- 1 (28 oz.) can Dei Fratelli Diced Tomatoes
- 1 (28 oz.) can Dei Fratelli Tomato Puree
- 1 Cup White Onion medium diced
- 1/2 Cup Carrot peeled, medium diced
- 1/2 Cup Green Bell Pepper medium diced
- 2 Tbsp. Garlic minced
- 1/4 Cup Chili Powder
- 1 Tbsp. Smoked Paprika
- 1 tsp. Cumin
- 1 tsp. Sea Salt
- 3 Tbsp. Buffalo Sauce
- 2 (15 oz.) cans Chickpeas drained and rinsed
- 2 (15 oz.) cans Black Beans drained and rinsed
- 1 Tbsp. Lime Juice fresh
Instructions
- In a large stockpot, sweat onion, carrot, green pepper, and garlic over medium heat until softened, about 10 minutes.
- Add chili powder, paprika, cumin, and sea salt. Combine well and continue cooking another 3-5 minutes.
- Add Dei Fratelli Diced Tomatoes, Dei Fratelli Tomato Puree, buffalo sauce, chickpeas, and black beans. Reduce heat and simmer for 25-30 minutes. Finish by stirring in lime juice.
