Zucchini Soup
This delicious plant-based Zucchini Soup combines all your favorite veggies in one amazing bowl. Dei Fratelli Petite Diced Tomatoes, onion, zucchini, and crushed red pepper are all added to vegetable broth making this soup fit for the whole family.

Ingredients
- 1 (28 oz.) can Dei Fratelli Petite Diced Tomatoes drained
- 2 Tbsp. Extra Virgin Olive Oil
- 2 Cups. White Onion diced
- 1 Tbsp. Garlic minced
- 1 (32 oz.) carton Vegetable Broth
- 1 1 /2 tsp. Dried Basil
- 1/2 tsp. Dried Parsley
- 1/4 tsp. Red Pepper Flakes
- 1/4 tsp. Sea Salt
- 1/4 tsp. Black Pepper
- 4 Cups Zucchini sliced and quartered
Instructions
- In a large pot, heat oil over medium heat. Add onions and garlic and sauté for 5 minutes, or until onion is soft.
- Add Dei Fratelli Petite Diced Tomatoes, broth, and seasonings. Reduce heat, cover, and simmer for 20 minutes.
- Add zucchini and continue simmering until tender, about 10 minutes.
Notes
Serve over cooked rice or pasta for a hearty meal!
