Slow Cooker BBQ Chicken Sliders with Cabbage Slaw

Ingredients:
For the Easy BBQ Sauce:
- 1 (28 oz.) can Dei Fratelli Tomato Puree
- 1 Cup Brown Sugar, packed
- 1 Cup Maple Syrup
- 1 Tbsp. + 1 tsp. Apple Cider Vinegar
- 2 Tbsp. Dijon Mustard
- 2 Tbsp. Soy Sauce
- ½ tsp. Smoked Paprika
- 1 tsp. Black Pepper
For the BBQ Chicken Sliders:
- 1 Whole Rotisserie Chicken, or 2 lbs. chicken breasts or thighs
- 1½ Cups White Cheddar Cheese, shredded
- 12 Slider Buns
For the Shredded Cabbage Slaw:
- 1 Cup Red Cabbage, shredded
- 1 Cup Green Cabbage, shredded
- 1 Cup Carrot, shredded
- ½ Cup Mayonnaise
- 3 Tbsp. Rice Wine Vinegar
- 1 Tbsp. Maple Syrup
- ½ tsp. Sea Salt
- ½ tsp. Black Pepper
Instructions:
- Combine all ingredients for the Easy BBQ Sauce in a medium-sized bowl.
- Put chicken and Easy BBQ Sauce in your slow cooker, reserving 1 cup of BBQ sauce for later.
- Pull rotisserie chicken apart into shredded chicken for sliders ensuring to remove bones.
- If using a rotisserie chicken, cook on low for 2 hours in your slow cooker. If using chicken breasts or thighs, cook on high for 4 hours.
- While the chicken is cooking, combine all the ingredients for the Cabbage Slaw in a large bowl. Place in the refrigerator and chill for at least 30 minutes.
- Preheat the oven to 350 F.
- Place bottom halves of slider buns on a sheet tray and top with shredded BBQ chicken and shredded cheese.
- Bake bottom halves of sliders for 10-15 minutes in the oven, or until the cheese is melted.
- Take sliders out of the oven and top with Shredded Cabbage Slaw.
- Place top buns on sliders, cut, and serve at your next family picnic!
