Rainbow Salsa

Ingredients

  • 1 (28 oz.) can Dei Fratelli Crushed Tomatoes
  • 1 (28 oz.) can Dei Fratelli Diced Tomatoes drained
  • 1 Orange Bell Pepper diced small
  • 1 Yellow Bell Pepper diced small
  • 1 Green Bell Pepper diced small
  • 1 Red Onion diced small
  • 2 Jalapeno minced
  • 1/2 Cup Cilantro chopped
  • 1/2 Cup Orange Juice
  • 2 tsp. Orange Zest
  • 2 tsp. Sea Salt
  • 2 tsp. Black Pepper
  • 1 (15.25 oz.) can Corn drained and rinsed
  • 1 (15.5 oz.) can Black Beans drained and rinsed

Instructions

  • In a large bowl, combine Dei Fratelli Crushed Tomatoes, Dei Fratelli Diced Tomatoes, peppers, onion, jalapeno, cilantro, orange juice, orange zest, and seasonings.
  • Transfer mixture to a food processor and pulse 3-4 times or until desired texture.
  • Remove salsa from food processor and mix in black beans and corn.
  • Serve with pita bread, fresh veggies, or blue corn chips for the full rainbow effect!

Notes

Skip the food processor step and just mix in your black beans and corn for a quick and flavorful pico de gallo salsa!
