A quick lunch ready in minutes! Tomato Spanish Mug Rice combines Dei Fratelli Chopped Mexican Tomatoes, red beans, and Spanish rice for this savory lunch perfect for the workplace.

Instructions:

  • Spray the inside of 4 large mugs with non-stick cooking spray. Combine all ingredients in the mugs and cover tightly.
  • Cook in microwave on power 7 for 2 minutes. Carefully unwrap and stir. Cover again and cook an additional minute on power 5.
  • Uncover and let sit for 3 minutes.
  • Rice will be very hot. Allow to cool before enjoying.

Chef's Tip:

Substitute with black beans if you prefer.  Try with a warm tortilla and plant-based sour cream for a full meal!
