Elevate your vegetarian chili game with this Sweet Potato Chili recipe featuring Dei Fratelli Seasoned Diced Tomatoes, hearty black beans, and a touch of cinnamon for that perfect autumn flavor. Trust us, you won't be able to get enough!

Ingredients:

  • 1 (28 oz.) can Dei Fratelli Seasoned Diced Tomatoes, drained
  • 1 White Onion, diced
  • 2 Tbsp. Extra Virgin Olive Oil
  • 2 Sweet Potatoes, peeled and diced
  • 1 Bell Pepper, diced
  • 2 Tbsp. Garlic, minced
  • 1/2 tsp. Chili Powder
  • 1/2 tsp. Cumin
  • 1 tsp. Paprika
  • 1/2 Tbsp. Cocoa Powder
  • 1/2 tsp. Cinnamon
  • 4 Cups Vegetable Stock
  • 1 (15.25 oz.) can Black Beans, drained and rinsed

Instructions:

  • In a large pot, heat extra virgin olive oil over medium-high heat. Add in diced onion and minced garlic and sauté for 5 minutes.
  • Add in diced bell pepper and continue sautéing for 3 more minutes.
  • Once the onions, garlic, and bell pepper are softened, add in Dei Fratelli Seasoned Diced Tomatoes, black beans, and spices. Stir well to combine all the ingredients.
  • Add in vegetable stock and the sweet potatoes and bring the chili to a boil.
  • Once boiling, reduce heat and simmer for 30-45 minutes or until the sweet potatoes are tender.
  • Serve this Sweet Potato Chili hot with your favorite chili toppings such as cheese, sour cream, and diced green onions!
