A mountain of nachos is always a good idea! Super Nacho Bowl is the perfect vegetarian tower of delicious nachos. Made with Dei Fratelli Chopped Mexican Tomatoes, 3 different cheeses, black beans, black olives, and peppers this restaurant-quality masterpiece is made right in your oven!

Ingredients:

  • 2 (14.5 oz.) cans Dei Fratelli Chopped Mexican Tomatoes, drained
  • 1/2 tsp. Garlic, granulated
  • 1/4 tsp. Cumin
  • 1/4 tsp. Paprika
  • 1/3 tsp. Sea Salt
  • 1/3 tsp. Black Pepper
  • 2 lbs. Tortilla Chips, salted
  • 1 1/2 lbs. Jack Cheese, shaved
  • 3/4 lbs. Muenster Cheese, shaved
  • 1/2 lbs. Queso Fresco, shaved or crumbled
  • 1 (15 oz.) can Black Beans, drained and rinsed
  • 1 (4 oz.) can Black Olives, drained and sliced
  • 1/2 Cup White Onion, diced
  • 1/2 Cup Green Bell Pepper, diced
  • 1/2 Cup Red Bell Pepper, diced
  • 1-2 Jalapenos , sliced thin
  • Nonstick Cooking Spray, as needed

Instructions:

  • Preheat oven to 375 F. Remove all but the lower rack in the oven.
  • In a small bowl, mix together all of the seasonings.  Set aside.
  • Optional step: Place onion and bell peppers into a medium-sized sauté pan. Sauté over medium-high heat until soft and onions are translucent, about 5 minutes.  This will help remove some of the moisture.
  • Spray the entire inside of a very large, oven-safe bowl with nonstick spray (we used a 13" stainless steel bowl).  Make sure the bowl will fit comfortably in the oven before spraying. Use 1/4 tsp. of the seasoning to coat the inside of the bowl.
  • Cover the bottom of the bowl with a layer of tortilla chips. Begin building your layer by topping the chips with 1/4 of the Dei Fratelli Chopped Mexican Tomatoes, cheeses, beans, olives, onion, and peppers. Finish with a sprinkle of 1/4 tsp. seasoning.
  • Top with another layer of chips and repeat until the bowl is filled, about 3 more times.  Make sure the very top layer is only chips.
  • Bake for 45 minutes or until cheese is completely melted.  Remove from oven carefully and cover with a large baking sheet or pizza pan.  Invert to flip nachos out of the bowl.

Chef's Tip:

Garnish with shredded lettuce, diced avocado, and fresh, chopped cilantro.  You can also add cooked protein to your layers, such as ground beef, shredded chicken, or sautéed portabello mushrooms.
