Potato soup made simple! Slow Cooker Ham and Potato Soup makes hearty and healthy possible. Adding Dei Fratelli Chopped Tomatoes with Onion & Garlic, potatoes, and carrots creates this healthy and hearty soup right in your slow cooker!

Ingredients:

  • 3 (14.5 oz.) cans Dei Fratelli Chopped Tomatoes with Onion & Garlic
  • 5 Cups Potatoes, peeled and chopped
  • 4 Cups Ham, cooked and chopped
  • 3 Cups White Onion, chopped
  • 1 1/2 Cups Carrot, chopped
  • 1/2 Cup Celery, chopped
  • 2 Cups Water
  • 1/2 tsp. Black Pepper
  • 1/2 tsp. Paprika

Instructions:

  • In a 6-quart slow cooker, add potatoes, ham, onion, carrots, and celery in separate piles. Be sure to keep them divided during cooking process.
  • Pour Dei Fratelli Chopped Tomatoes with Onion & Garlic and water over top. Cook on high for 4 hours.
  • Using a potato masher, mash potatoes for 30 seconds, or until desired consistency. Mix all ingredients together until well combined. Continue cooking for 1 hour to tenderize potatoes and vegetables. Season with black pepper and paprika.

Chef's Tip:

Garnish with fresh, chopped parsley and serve with crusty bread or warm cornbread.
