Make easy Sloppy Joe Sweet Potato Bowls with roasted sweet potatoes, savory sloppy joe meat, and fresh toppings. A hearty gluten-free dinner recipe from Dei Fratelli.

Ingredients:

  • 1 (15 oz. can) Dei Fratelli Sloppy Joe Sauce
  • 1 lb. Ground Pork
  • 2 (12 oz. bags) Frozen Sweet Potato Chunks
  • 2 Tbsp. Extra Virgin Olive Oil
  • Sea Salt, as needed
  • Black Pepper, as needed

OPTIONAL TOPPINGS

  • Dill Pickle Slices, diced
  • Cheddar Cheese, grated
  • Jalapeno Peppers, thinly sliced

PICKLED RED ONIONS

  • 1 medium Red Onion, sliced
  • 3/4 Cup Rice Wine Vinegar
  • 1 Tbsp. Granulated Sugar

HOMEMADE BURGER SAUCE COLESLAW

  • 1 (12 oz.) bag Coleslaw Mix
  • 1/2 Cup Mayonnaise
  • 1 Tbsp. Dijon Mustard
  • 1 Tbsp. Ketchup
  • 1 tsp. Pickle Juice
  • 1/2 tsp. Chili Powder
  • Sea Salt, to taste
  • Black Pepper, to taste

Instructions:

  • Toss cubed sweet potatoes with olive oil, salt, and pepper and add them to your air fryer. Fry them at 350 F for 20-25 minutes., or until they are fork tender.
  • Alternatively, you can bake them in your oven at 400 F for 20-25 minutes as well.
  • While the sweet potatoes are frying, add ground pork to a medium pan and cook on medium heat until cooked through, about 10 minutes.
  • Add Dei Fratelli Sloppy Joe Sauce to the ground pork and combine well.
  • Once the sweet potatoes are done cooking, add them to a bowl and top with the sloppy joe mixture and your selected toppings.

QUICK PICKLED RED ONION:

  • Thinly slice 1/2 red onion and put in a microwave safe bowl or jar with 1 Tbsp. granulated sugar.
  • Add rice wine vinegar so that it completely covers the red onion slices, about 3/4 cup.
  • Mix well and cover with a paper towel. Microwave for 2 minutes and carefully remove from microwave to cool.
  • These pickled red onion will keep for up to 2 weeks in the refrigerator.

HOMEMADE BURGER SAUCE COLESLAW:

  • Combine mayonnaise, dijon mustard, ketchup, chili powder, salt, and pepper in a bowl and mix well.
  • Add burger sauce to coleslaw mix and combine well.
