Make this classic Italian dish in your microwave with our Simple Mug Lasagna. Dei Fratelli Chopped Italian Tomatoes and plant-based cheese and meat are layered between pre-cooked lasagna noodles for this savory and filling meal that is ready in minutes.

Ingredients:

  • 1 (14.5 oz.) can Dei Fratelli Chopped Italian Tomatoes, drained and juice reserved
  • 3 Lasagna Noodles, cooked and trimmed to fit in mug
  • 6 Plant-Based Provolone Cheese, sliced, halved
  • 3/4 Cup Plant-Based Meat Crumbles
  • Nonstick Cooking Spray, as needed

Instructions:

  • Lightly spray 4 large mugs with the pan spray.
  • Build in the following order: noodle, 1 Tbsp. meat, 1 Tbsp. Dei Fratelli Chopped Italian Tomatoes, 1/2 slice of cheese.
  • Repeat this 3 times for each mug.  Put 2 Tbsp. reserved juice in each mug.
  • Cover top of mug.
  • Cook at 70% power in the microwave for 90 seconds.
  • Open the microwave door and make sure the mug is still covered.  Cook for another 60 seconds in the microwave at 70% power.
  • Remove cover and allow to cool a few minutes.  Lasagna will be very hot.
     

Chef's Tip:

Easy weeknight meal!  Add crushed red pepper for a spicy spin on your new favorite lasagna!
