- 1 (28 oz.) can Dei Fratelli Whole Tomatoes, drained
- 3 lbs. Chicken Thighs, skinless
- 1 tsp. Sea Salt
- 1/2 tsp. Black Pepper
- 1 Tbsp. Extra Virgin Olive Oil
- 1/2 lb. Pancetta
- 4 cloves Garlic, minced
- 1 (2 oz.) tin Anchoives, drained
- 1/2 tsp. Red Pepper Flakes
- 1 Cup Chicken Broth
- 1 Tbsp. Basil, fresh, chopped
- 1 1/2 tsp. Oregano
- Mozzarella Cheese, shredded, to taste

Preheat oven to 400 F.
Pat the chicken thighs with a paper towel to dry and season both sides of each thigh with sea salt and black pepper.
In a large skillet, heat the olive oil over medium-high heat. Add pancetta and cook for 5 minutes, tossing occasionally. Remove the crispy pancetta from the pan and set aside.
Add chicken to the same skillet and begin to sear on both sides, until they are golden brown.
Once fully cooked, transfer the chicken to a large plate and remove about 1/2 of the remaining oil in the skillet.
With 1/2 the olive oil remaining in the skillet, sauté the minced garlic, anchovies, and red pepper flakes together. Cook in the oil for about 1 minute.
Add Dei Fratelli Whole Tomatoes, chicken broth, and basil leaves to the skillet. Smash the tomatoes using the back of a spoon until your desired consistency.
Allow the tomato sauce mixture to simmer for 10 minutes.
Add the chicken to the tomato sauce mixture in the skillet and place in the preheated oven for 30 minutes.
Remove the pan from the oven and top with shredded mozzarella cheese. Place the Pizza Chicken Bake back into the oven and broil for 1-2 minutes, or until the cheese is melted.
Break the crispy pancetta into pieces to use as a garnish.
Top the Pizza Chicken Bake with any extra basil and the crispy pancetta.
