What is Pollo in Potacchio?
Pollo in Potacchio is a traditional Italian braised chicken dish originating from the Marche region of Italy. It typically features chicken pieces browned in olive oil and slowly simmered ("braised") in a savory, aromatic sauce made with tomato puree, white wine, garlic, rosemary, and thyme.
Should I use chicken thighs to chicken breasts for braising?
Bone-in or boneless chicken thighs are ideal for braising because they remain incredibly juicy and tender during a long simmer. However, you can also use chicken breasts—just be sure to keep them covered while simmering in the Dei Fratelli Tomato Puree sauce so they retain their moisture.
What to serve with Italian Braised Chicken?
This rich, savory dish pairs wonderfully with sides that can soak up the delicious braising sauce. Great options include:
- Pasta: Serve over a bed of warm tagliatelle, fettuccine, or penne.
- Bread: Pair with warm garlic bread or crusty Italian bread for dipping.
- Vegetables: Roast zucchini, eggplant, or Italian green beans on the side.
Why use Tomato Puree for braising chicken?
Dei Fratelli Tomato Puree provides a smooth, thick base that clings to the chicken as it cooks. Unlike watery tomato sauces, a rich, no water added, tomato puree reduces into a deeply flavorful, concentrated gravy as it simmers alongside white wine and fresh herbs.
