Our Fish & Tomato Stew is a delightful medley of flavors and textures, perfect for a cozy meal. This tomato based dish features a combination of Dei Fratelli Whole tomatoes and Dei Fratelli Gluten Free Condensed Tomato Soup. With an homage to traditional Soupe de Poisson; this soup is complemented with tender smoked wild mackerel, orange zest, and a variety of spices. Finish this soup with some fresh baguette for the full French experience.

Ingredients:

  • 1 (28 oz.) can Dei Fratelli Whole Tomatoes
  • 1 (10.75 oz.) can Dei Fratelli Gluten-Free Tomato Soup
  • 3 Tbsp Olive oil
  • 2 Tbsp Garlic, minced
  • 10 ea. Pearl onions, peeled & halved
  • 1 (4.4 oz.) tin Smoked wild mackerel, drained
  • 4 cups Vegetable broth
  • 1 cup water
  • 1 Tbsp Orange zest
  • 1/4 tsp salt
  • 1/2 tsp Black pepper
  • 1/4 tsp Ground fennel
  • 1/4 tsp Ground thyme
  • 2 ea Bay leaf
  • 1/2 cup Heavy cream
  • 2 Tbsp Cornstarch

Instructions:

  • In a large pot, heat olive oil over medium high heat. Add the garlic and pearl onions and cook until lightly browned.
  • Add in your mackerel and cook for another 5 minutes.
  • Stir in your Dei Fratelli Whole Tomatoes, Dei Fratelli Tomato Soup, vegetable broth, water, orange zest and spices. Bring to a boil and then reduce heat and allow to simmer for about an hour.
  • Remove from heat and carefully strain the soup, removing the bay leaves. Setting aside the liquid portion, place the solids into a blender or food processor and blend until smooth
  • Return the liquid portion and the blended portion back into the pot and bring to a soft boil. In a small bowl, whisk together the corn starch and heavy cream making sure there are no lumps, and stir into the soup. Simmer for another 15 minutes.
  • Serve hot with fresh baguette and your favorite cheese.

Chef's Tip:

Don’t like smoked mackerel? No problem, try this recipe with 4-6oz of your favorite fresh fish fillet. Just make sure to remove the skin and bones as necessary.
