Fire Roasted Pot Roast is the perfect one-pot dinner with a twist. Dei Fratelli Fire Roasted Crushed Tomatoes add some smoky flavor to traditional chuck roast, carrots, potatoes, and onions to create a dish the whole family can enjoy, and with less dishes too!
- 1 (28 oz.) can Dei Fratelli Fire Roasted Crushed Tomatoes
- 2 lbs. Chuck Roast
- Salt , as needed
- Black Pepper , as needed
- 2 Tbsp. Vegetable Oil
- 2 Cups Carrot, roughly chopped
- 2 Cups Celery, roughly chopped
- 2 Cups White Onion, diced
- 3 Cups Red Potatoes, diced
- 3 1/2 Cups Water

Preheat oven to 350 F.
Season roast generously with salt and pepper on all sides. Heat oil over medium-high heat in a Dutch oven. Carefully sear roast on all sides until browned, about 1 minute per side. Set aside.
Add carrots, celery, and onion to Dutch oven and sauté until onions are translucent, about 3-4 minutes. Remove pan from heat, add potatoes, and combine well. Return roast back to pan on top of vegetables.
Pour Dei Fratelli Fire Roasted Crushed Tomatoes over all ingredients. Add water, cover, and cook in oven for 1 1/2 – 2 1/2 hours, or until roast reaches desired tenderness and can easily be shredded.
Plan ahead! Throw all ingredients in your slow cooker and cook throughout the day.
If you do not have a Dutch oven, use a stockpot or soup pot instead!
