Our Easy Enchiladas are the best way to add some Mexican flair to your dinner tonight. Dei Fratelli Chopped Mexican Tomatoes, white rice, and your favorite spicy seasonings combine in a soft tortilla shell to be baked in your oven.
- 1 (14.5 oz.) can Dei Fratelli Chopped Mexican Tomatoes, drained
- 1 Cup White Rice
- 1/2 lb. Ground Beef
- 1/2 tsp. Chili Powder
- 1/4 tsp. Cumin
- 8 Tortilla Shells, soft
- 2 Cups Colby Jack Cheese, shredded

Preheat oven to 375 F.
Cook rice according to package directions ans set aside.
While rice is cooking, add ground meat to a large skillet. Cook over medium heat until brown, about 8-10 minutes.
Add Dei Fratelli Chopped Mexican Tomatoes, cooked rice, and seasonings. Mix well. Divide mixture evenly between tortilla shells. Top with 3 Tbsp. of cheese in each tortilla. Roll and place seam-side down in a 9×13 baking dish. Top evenly with remaining 1/2 cup of cheese.
Bake for 15-20 minutes, or until cheese is melted and turns golden brown.
