Looking for a fresh and creamy summer salad recipe? Look no further! This salad is bursting with flavor thanks to Dei Fratelli Diced Tomatoes, crisp cucumber, and zesty red onion. It's the perfect side dish for your next backyard BBQ or picnic.

Ingredients:

  • 1 (28 oz.) can Dei Fratelli Diced Tomatoes, drained and rinsed
  • 2 Cucumbers, diced
  • 1 Red Onion, diced
  • 1/2 Cup Parsley, chopped
  • 1/2 Cup Mayonnaise
  • 1/2 Cup Sour Cream
  • 1/4 Cup Lemon Juice
  • 1/2 Cup Green Onion, chopped
  • 2 Tbsp. Dill Weed
  • 2 Tbsp. Garlic, minced
  • 1/2 tsp. Black Pepper
  • Feta Cheese, optional

Instructions:

  • In a medium bowl, combine drained Dei Fratelli Diced Tomatoes with the diced cucumber, red onion, and parsley. Set aside.
  • In a small bowl, whisk the mayonnaise, sour cream, lemon juice, green onion, dill weed, minced garlic, and black pepper. Combine until fully mixed.
  • Pour the sour cream and mayonnaise mixture over the diced tomato, cucumber, and red onion pieces. Gently fold together until everything is coated in the mayonnaise and sour cream.
  • Serve immediately or chill in the refrigerator for 2 hours before serving. Garnish with crumbled feta cheese prior to serving.

Chef's Tip:

Make this your own by adding your favorite seasonal vegetables like radishes, carrots or bell peppers.
