Ingredients:

  • 1 (14.5 oz.) can Dei Fratelli Petite Diced Tomatoes with Onion, Celery, and Peppers, drained
  • 16 oz. Fettuccine Pasta
  • 16 oz. Boneless Chicken Breast
  • 3 Tbsp. Cajun Seasoning
  • 1 Tbsp. Extra Virgin Olive Oil
  • 4 Tbsp. Butter
  • 4 cloves Garlic, minced
  • 1/2 White Onion, diced
  • 1 Green Bell Pepper, diced
  • 12 oz. Heavy Cream
  • 4 oz. Parmesan Cheese, shredded
  • Parsley, to taste

Instructions:

  • In a large pot, bring water to a boil and cook your fettuccine pasta according to package directions. Reserve 1/2 cup of the water used to boil your pasta. Drain the rest of your pasta and set it aside to cool.
  • If you prefer a lighter dinner, cut your chicken breasts to your desired thickness.
  • Put 3 Tbsp. of Cajun seasoning in a bowl. Pat chicken breasts dry with a paper towel and coat them in the Cajun seasoning by putting the chicken into the seasoning bowl. You can add more seasoning to the bowl if you prefer a spicier chicken.
  • In a large skillet or Dutch oven, heat the extra virgin olive oil over medium-high heat. Add the chicken and sear both sides.
  • Once all sides of the chicken are seared, lower the heat to medium.
  • Add butter and garlic to the same pan as your chicken and allow to cook for 1 minute.
  • Add Dei Fratelli Petite Diced Tomatoes with Onion, Celery, and Peppers and sauté for 2 more minutes.
  • Pour in heavy cream and add the shredded parmesan cheese. Bring the entire mixture to a simmer.
  • Once the sauce is simmering, add your cooked pasta to the pan and mix well. Garnish with fresh parsley and more parmesan cheese.
