These Bacon, Cucumber, and Tomato Finger Sandwiches are an easy BLT-inspired appetizer made with cucumbers, cream cheese, bacon, and tomatoes.
- 1 (14.5 oz.) can Dei Fratelli Petite Diced Tomatoes, drained
- 2 Cucumbers
- 1/3 Cup Cream Cheese
- 1/2 Cup Mayonnaise
- 1/2 tsp. Garlic Powder
- 1 tsp. Onion Powder
- 1/2 tsp. Rosemary, fresh or dried
- 1/2 tsp. Thyme, fresh or dried
- 1/2 Cup Bacon Bits, precooked, divided
Peel cucumbers, if desired. Cut the cucumbers into 1/2 inch thick rounds.
Using a spoon, remove the seeds from the cucumber, creating a pocket for the filling. Do not remove too much, otherwise your filling will fall through the bottom.
Mix mayonnaise, cream cheese, garlic powder and onion powder together, until well combined.
Add Dei Fratelli Petite Diced Tomatoes, 1/3 cup bacon bits, rosemary and thyme into the cream cheese mixture. Fold together well until the tomatoes and bacon are well distributed throughout the filling.
Spoon your filling onto each of the cucumber slices and sprinkle the remaining bacon bits on top.
