Ingredients:

FOR THE SALAD

  • 2 (28 oz.) cans Dei Fratelli Diced Tomatoes, drained
  • 2 Cucumbers, small diced
  • 1 Cup Red Onion, diced
  • 1 Jalapeno, minced
  • 1 Tbsp. Lime Juice
  • 2 tsp. Garlic, minced
  • 1/4 Cup Cilantro, chopped

FOR THE DRESSING

  • 1/2 Cup White Vinegar
  • 1/4 Cup Water
  • 1/4 Cup Granulated Sugar
  • 1 1/2 tsp. Sea Salt
  • 1/4 tsp. Black Pepper
  • 1/4 tsp. Cumin

Instructions:

  • In a small pot combine the salad dressing ingredients. Cook ingredients over medium heat until the sugar is dissolved, about 5 minutes.
  • Remove from heat and allow the dressing to cool.
  • While the vinaigrette is cooling, combine Dei Fratelli Diced Tomatoes, cucumber, red onion jalapeno, lime juice, garlic, and cilantro in a large bowl.
  • Toss veggies with your cooled vinaigrette and then cover tightly.
  • Chill in the refrigerator for at least 1 hour.
  • Serve cold or at room temperature.

Chef's Tip:

Top this salad with some crumbled feta cheese for a full Mediterranean meal.
This recipe is good for up to 3 days in the refrigerator.
