This authentic Mexican dish adds color to any dinner plate! Our Green Rice & Tomatoes combines Dei Fratelli Diced Tomatoes, spinach, green bell pepper, parsley, and jalapeno for this delicious burst of flavor and color!

Ingredients:

  • 1 (28 oz.) can Dei Fratelli Diced Tomatoes, drained
  • 6 Cups Spinach, packed
  • 1/2 Cup Green Bell Pepper, diced
  • 1/2 Cup White Onion, diced
  • 1/4 Cup Fresh Parsley
  • 1/4 Cup Fresh Cilantro
  • 2 tsp. Jalapeno, diced
  • 2 tsp. Garlic, minced
  • 4 Cups White Rice, cooked

Instructions:

  • In a large food processor, mix spinach, green pepper, onion, parsley, cilantro, jalapeno, and garlic until smooth.
  • Combine mixture with cooked rice. Fold in Dei Fratelli Diced Tomatoes.

Serve as a side dish with your favorite seasoned chicken or vegetables.
