This healthy twist on an Italian staple is perfect for your family! Made with Dei Fratelli Pizza Sauce, breadcrumbs, eggplant, and 2 different cheeses, our Eggplant Parmesan is just waiting to be served at your dinner table.

Ingredients:

  • 1 (15 oz.) can Dei Fratelli Pizza Sauce
  • 2 Eggs
  • 1 Tbsp. Water
  • 2 Cups Seasoned Breadcrumbs
  • 1 small Eggplant, peeled and cut into 1/2" slices
  • Extra Virgin Olive Oil
  • Mozzarella Cheese, sliced
  • 1/4 Cup Parmesan Cheese, grated

Instructions:

  • Preheat oven to 350 F.
  • In a small bowl, whisk together eggs and water. Place breadcrumbs in a seperate bowl. Dip each eggplant slice into egg mixture, then in breadcrumbs until fully coated. Set aside.
  • Heat 2-3 Tbsp. of olive oil in a large saucepan over medium-high heat. Place a single layer of eggplant in the pan and lightly fry, about 3-5 minutes on each side. Add more olive oil and repeat as needed.
  • Cover the bottom of a large baking dish with 1/2 cup of Dei Fratelli Pizza Sauce. Arrange eggplant in a single layer over the sauce. Top with remaining sauce, followed by mozzarella slices and parmesan. Bake for 20-25 minutes, or until cheese is melted and golden brown.

Chef's Tip:

Serve with your favorite pasta!  Dei Fratelli Pizza Sauce can be substituted with any of the Dei Fratelli Pasta Sauces!
