Add some Middle Eastern flair to your lunch with our Collard Green Tabbouleh! Made with Dei Fratelli Petite Diced Tomatoes, quinoa, and scallions this recipe will inspire a whole dinner of Middle Eastern flavor!

Ingredients:

  • 1 (14.5 oz.) can Dei Fratelli Petite Diced Tomatoes, drained and rinsed
  • 1 Cup Quinoa
  • 1 Cup Water
  • 2 Cups Collard Greens, finely chopped
  • 1 1/2 Tbsp. Scallions, sliced
  • 1 Tbsp. Lemon Juice
  • 1 tsp. Garlic, minced
  • 1/2 tsp. Sea Salt
  • 1/4 tsp. Black Pepper

Instructions:

  • Combine quinoa and water in a small saucepan and bring to a boil. Reduce heat, cover, and simmer for 15 minutes. Drain and set aside to cool.
  • Once cooled, mix all ingredients in a bowl until well combined.
