Ingredients:

  • 1 (14.5 oz.) can Dei Fratelli Chopped Mexican Tomatoes, drained, 1/2 Cup for recipe, reserve the rest for garnish
  • 2 1/2 Cups White Rice, cooked
  • 1 Cup Garbanzo Beans, drained
  • 1 Cup Black Beans, drained
  • 1/2 tsp. Cumin
  • 1/2 tsp. Granulated Garlic
  • 1/2 tsp. Salt
  • 1/4 tsp. Black Pepper
  • 1 Tbsp. Extra Virgin Olive Oil

Instructions:

  • In a food processor, grind the garbanzo beans into a paste.
  • In a separate bowl, mix together the rice, black beans, and 1/2 cup of Dei Fratelli Chopped Mexican Tomatoes.
  • Take 1 1/3 cups of the black bean mixture and add to the ground garbanzo beans in the food processor. Blend together until well combined.
  • Combine the garbanzo mixture from the food processor and the black bean mixture in the bowl. Add the seasonings and mix together.
  • Place 1/2 cup of the finished mixture and press into patties about 3/4 inch thick. Repeat until the entire mixture is gone.
  • In a sauté pan on medium heat, add 1 Tbsp. olive oil. When hot, add patties and cook for 3-5 minutes on each side.
