This tasty dinner is made perfectly with Dei Fratelli Seasoned Diced Tomatoes, crunchy potato chips, and 4 different cheeses. Potato Chip Casserole is a cheesy and delicious dinner, snack, or appetizer for any occasion.

Ingredients:

  • 1 (28 oz.) can Dei Fratelli Seasoned Diced Tomatoes, drained and rinsed
  • 1 lb. Shredded Potatoes
  • 1 Cup Sour Cream
  • 1 Cup Colby Cheese, shredded
  • 1 Cup Jack Cheese, shredded
  • 1/2 Cup Gouda Cheese, shredded
  • 1/2 Cup White Onion, minced
  • 4 Tbsp. Unsalted Butter, melted
  • 1/4 tsp. Sea Salt
  • 1/4 tsp. Black Pepper
  • 4 Cups Crinkle Cut Potato Chips
  • 1/2 Cup Parmesan Cheese, grated

Instructions:

  • Preheat oven to 375 F.
  • Combine all ingredients, except potato chips and parmesan cheese, in a large bowl. Mix well and spread evenly in a greased 9×13 baking dish. Bake for 35 minutes.
  • While the casserole is baking, smash the potato chips and parmesan cheese in a resealable bag until well combined and resembles bread crumbs.
  • Evenly top the casserole with the chip mixture and bake for an additional 10 minutes.

Chef's Tip:

Use your favorite brand of nacho chips for a spin on this American classic.  Add cooked, pulled chicken to turn this into a hearty meal.
