A healthy twist on potato O'Brien, Eggplant O'Brien combines Dei Fratelli Seasoned Diced Tomatoes, green bell pepper, and zucchini to create this plant-based side made for any family.

Ingredients:

  • 2 (28 oz.) cans Dei Fratelli Seasoned Diced Tomatoes
  • 1 Eggplant, peeled and cut into 3/4" slices
  • Salt, to taste
  • 2 Tbsp. Extra Virgin Olive Oil
  • 2 Cups Green Bell Pepper, diced
  • 1 Cup White Onion, diced
  • 1 tsp. Garlic, minced
  • 2 Zucchini or Yellow Squash, diced
  • Black Pepper, to taste

Instructions:

  • Arrange eggplant slices flat on a large platter.  Season with salt and allow to rest for 20 minutes to pull out moisture.  Rinse off salt, pat dry, and dice into cubes. Set aside.
  • Heat oil in a large saucepan over medium heat.  Add green bell pepper, onion, and garlic.  Cook until onions become translucent, about 5 minutes.
  • Add Dei Fratelli Seasoned Diced Tomatoes, eggplant, and zucchini or yellow squash.  Allow to heat through, about 5 minutes.  Reduce heat, cover, and simmer for 15 minutes, stirring occasionally.  Season with salt and pepper.

Chef's Tip:

Garnish with minced green bell pepper and serve with toasted bread and butter.
