Our traditional Curry Soup allows you to bring authentic Indian flavors into your home. Made with Dei Fratelli Gluten-Free Tomato Soup, butternut squash, and carrots, this soup is packed full of delicious heat and spice.

Ingredients:

  • 1 (10.75 oz.) can Dei Fratelli Gluten-Free Tomato Soup
  • 1/2 large Butternut Squash
  • 1/2 Cup White Onion, diced
  • 1/2 Cup Celery, diced
  • 1/2 Cup Carrot, diced
  • 6 Cups Vegetable Broth
  • 2 Tbsp. Garlic, minced
  • 1 Tbsp. Apple Cider Vinegar
  • 1 Tbsp. Curry Spice
  • 1 Tbsp. Salt

Instructions:

  • Preheat oven to 350 F.
  • Roast squash for 45 minutes, or until tender. Set aside to cool.
  • In a large saucepan, sauté onion, celery, and carrot over medium heat for 5 minutes. Add remaining ingredients and combine well. Reduce heat and simmer for another 5 minutes.
  • Once squash is cooled, scoop out and add to soup mixture. Continue simmering for an additional 10 minutes.
  • Using a hand mixer or immersion blender, blend ingredients together until smooth.

Chef's Tip:

Garnish with fresh, chopped parsley and a squeeze of lime.
