Using our Mexicali Dip recipe, our Mexicali Chicken Burrito repurposes this dip as a spread for a burrito or wrap. Made with Dei Fratelli Chopped Mexican Tomatoes, chicken breasts, brown rice, and Mexican cheese blend this recipe is great for a weekend lunch or a healthy and hearty grab-and-go dinner.
For the Mexicali Dip use a hand mixer, combine all ingredients on medium-low speed until well incorporated.
Fill each tortilla with 1/2 cup rice, 1/4 of the chicken, 2 Tbsp. cheese, and 2 Tbsp. of lettuce. Drizzle each with 2 Tbsp. of Mexicali Dip. Roll to create a burrito.

Can also be grilled after rolling! Serve with a side of tortilla chips and more Mexicali Dip.
