Cover your entire plate with our plant-based Tomato Mushroom Gravy! Made with Dei Fratelli Stewed Tomatoes, vegetable stock, and cabernet sauvignon, this recipe creates the perfect mixture to drown your mashed potatoes in.

For Tomato Mushroom Gravy:

  • 2 Tbsp. Tomato Secret Recipe
  • 1 Tbsp. Extra Virgin Olive Oil
  • 3 Cups Cremini Mushrooms, minced to 1/3"
  • 1 Cup White Onion, minced
  • 2 1/4 Cup Vegetable Stock, low sodium
  • 4 Garlic Cloves, minced
  • 1 Tbsp. Fresh Thyme, minced
  • 1/4 Cup Cabernet Sauvignon
  • 2 Tbsp. Tamari
  • 2 Tbsp. Nutritional Yeast
  • 2 Tbsp. Cornstarch
  • 1/4 tsp. Black Pepper

Instructions:

  • Preheat oven to 300 F.
  • To make Tomato Secret, spray baking sheet with oil. Pat Dei Fratelli Stewed Tomatoes dry with a paper towel to remove excess moisture. Place tomatoes evenly on the baking sheet and bake for 40 minutes.
  • Heat oil in a large sauté pan. Add mushrooms and onions and sauté over medium-high heat until brown, about 10 minutes, stirring occasionally.
  • Add about 3/4 of the vegetable stock as well as all of the garlic and thyme. Bring to a simmer and cook for an additional 6-8 minutes.
  • While that simmers, whisk the remaining stock with the wine, tamari, yeast, cornstarch, and black pepper in a small bowl. Gradually add to the simmering sauce to allow the gravy to thicken considerably. Cook for an additional 2 minutes.
  • Prior to serving, add the Tomato Secret and simmer for 5 minutes.

Try this on an open-faced sandwich, or with your favorite plant-based meatballs.
