Aunt Mary's Cabbage Soup

Our Aunt Mary knew how to make a good soup!  Aunt Mary’s Cabbage Soup is made with Dei Fratelli Seasoned Diced Tomatoes and Tomato Juice.  She then added smoked kielbasa to make this soup a favorite in our family recipe books.

Ingredients:

  • 1 (28 oz.) can Dei Fratelli Seasoned Diced Tomatoes, drained
  • 3/4 Cup Dei Fratelli Tomato Juice
  • 3 Tbsp. Vegetable Oil
  • 1 lb. Smoked Kielbasa, sliced
  • 1 Cup White Onion, diced
  • 1 tsp. Garlic, minced
  • 2 tsp. Dijon Mustard
  • 4 Cups Potatoes, peeled and diced
  • 2 Cups Carrots, peeled and diced
  • 1 Cup Green Bell Pepper, diced
  • 4 Cups Cabbage, shredded
  • 6 Cups Water
  • 1 tsp. Salt
  • 1/4 tsp. Black Pepper

Instructions:

  • In a large stockpot, heat oil over medium heat.  Add kielbasa and cook until browned, about 5 minutes. Add onion and garlic and continue cooking another 3-5 minutes, or until onion is tender.
  • Add potatoes, carrots, and green pepper.  Continue cooking until veggies become tender, about 8-10 minutes, stirring occasionally.
  • Add Dei Fratelli Seasoned Diced TomatoesDei Fratelli Tomato Juice, and remaining ingredients.  Bring to a boil.  Reduce heat, cover, and simmer for an additional 15 minutes.

Chef's Tip:

Garnish with caraway seeds and serve with freshly baked dinner rolls.
