Mexican Rice and Peas is a protein-packed side filled with Dei Fratelli Chopped Mexican Tomatoes, white rice, and black eyed peas for a delicious and healthy side for taco night!

Ingredients
- 1 (14.5 oz.) can Dei Fratelli Chopped Mexican Tomatoes drained
- 1 Cup White Rice
- 1 (15 oz.) can Black Eyed Peas drained and rinsed
Instructions
- Cook white rice according to package instructions until tender and fluffy.
- In a large saucepan, combine cooked rice, Dei Fratelli Chopped Mexican Tomatoes and peas over medium heat. Cook until heated through, about 5 minutes, stirring occasionally.
Notes
Garnish with fresh chopped cilantro.
