Garbanzo Vegetable Soup

Ingredients

  • 1 (14.5 oz.) can Dei Fratelli Chopped Tomatoes with Onion & Garlic
  • 4 Cups Vegetable Broth
  • 1/2 Cup Carrot chopped
  • 1/2 Cup Celery chopped
  • 1/2 Cup White Onion chopped
  • 1/2 Tbsp. Parsley dried
  • 1 (15 oz.) can Garbanzo Beans drained and rinsed
  • 1 tsp. Hot Sauce

Instructions

  • In a large saucepan, combine broth, carrots, celery, onion, and parsley. Bring to a boil, then reduce heat and let simmer for 10 minutes.
  • Add Dei Fratelli Chopped Tomatoes with Onion & Garlic, garbanzo beans and hot sauce. Bring to a slow boil over medium-high heat. Reduce heat, cover and simmer for an additional 30 minutes.

Notes

For a heartier soup, add 1 cup of your favorite plant-based meat alternative!
